Chef Fan Jiabiao – Grand Hyatt Beijing who has been roasting duck for more than two decades offers some simple suggestions to enhance your flavor journeys with us at Shinsei. According to Chef Fan, diners should eat Peking duck in the following order:

  1. Taste the skin with sugar.
  2. Breast meat with shallot, cucumber and sweet soybean paste.
  3. Leg with cucumber, garlic paste and sweet soybean paste, wrapped in a pancake

“In this way, you will feel the flavor increases, step-by-step,” says Chef Fan.

Every Thursday, Shinsei brings Beijing to Dallas. Crispy skin, tender and succulent Peking Duck is prepared in limited amounts by the Shinsei kitchen. Served at your table with Chinese pancakes, savory sauce, scallions and veggies.
